Is there a real reason fields are mainly North and South? I know Lake Central flipped theirs when they redid it. Is it really just because of the sun? Hanover, River Forset, Wheeler and VU are only east west fields I can think of in this area.

In the past many games were played on Saturdays with the kickoffs occurring when the sun was almost at apex, so the sun did not play a part in advantage or disadvantage. Of course this was before many fields were lighted. At many facilities the field had to be fit to the plot of land available. Back in the day kickoffs on Friday nights were at 8:00, so the sun was not a problem.
